Cookies n Cream Protein Pancakes (Gluten-Free)
Cookies n Cream protein pancakes! Almost gluten-free! I call it almost gluten-free because the powder I used has some gluten – you can replace with gluten free powder to make it 100%
There are so many protein pancake recipes out there, and some of my favorites are from my friend LAQ Fitness.
But whenever the recipe says “food processor” and “grate fruit finely” I’m like, are you kidding!? That’s already too complicated for me.
This recipe using “cheat/timesaver” ingredients Herbalife cookies n cream powder and Muscle Egg vanilla flavored egg white. You can substitute with any other protein powder or plain egg whites (if using plain egg whites, add some vanilla extract to the batter).
How to Make:
2/3 cup coconut flour, 2/3 cup egg white (equal parts), 2 small scoops protein powder (or 1 big scoop), 2 tsp baking powder, pinch of salt.
Mix this together. Batter will be very thick here so start adding water (or almond milk if you prefer) to make it to the right pancake consistency. (about 2/3 cups)
Heat coconut oil on medium high heat & cook the pancakes. 1/3 cup of batter makes one es one perfect size cake.
This recipe makes 6-7 cakes. Enjoy 3 with some agave nectar. Save the rest in airtight container for healthy meal/snack option.
Make them ahead and they make a very easy healthy snack and meal on the go!
